Domaine La Combaz is managed by Emile Blum, 3rd generation of the family to work on the estate. The succession is assured by Laurine, the daughter of Emile who is currently studying oenology in Changins and who works alongside her father on the estate.
The grandfather of Emile Blum started on the estate as a farmer. Now La Combaz estate owns 6.5 hectares, and produces 7 wines. Since 1990, the vinification is carried out on the estate. Emile likes to work from the grapes to the sale of the product.
The wines of Domaine La Combaz
The estate produces 7 wines:
- Pinot noir aged in barrels
- Pinot noir in tuns
- Viognier: powerful wine
- Œil de perdrix
- Puissance Cinq: a blend that gives a structured wine, quite round. It goes very well with game and red meat.
- Cabernet Jura Blanc: the latest addition. A fine wine, little produced in the region.
Laurine would like to add one or two red grape varieties, watch this space!
The estate works a lot in barrels. The quality of the wood is essential and Emile likes to visit the forests to ensure only the best quality is chosen.
For Laurine, her favourite is Cabernet Blanc, because she participated in its development.

Activities at the estate
The estate participates in the Vaud Open Cellar Days and the Balade dans le vignoble of Ollon. This tasting-tour allows you to discover the wines of Ollon at your own pace, according to your desires. On Saturday evenings and Sundays, Domaine La Combaz organises concerts, which are not to be missed!

After your aperitif at Domaine La Combaz, Emile and Laurine will only be too happy to suggest some restaurants: the Hôtel de Ville in Bex, the Café Suisse in Bex, the Eurotel Victoria in Villars, the Auberge du Bouillet in Bex, at the exit of the salt mines.
